Here's a super easy way to make a fresh dressing from scratch!  All you need is a glass jar, a few  ingredients and SHAKE!

One Minute Home Made Dressing

Ingredients:
1/2 cup extra virgin olive oil
2 1/2 tablespoons  balsamic vinegar
1 teaspoon dijon mustard
1 medium clove garlic, minced
sea salt & fresh ground pepper to taste

(You can also adding fresh or dried basil, parsley, oregano...)

Place all ingredients in a clean glass jar (use a recycled jam or peanut butter jar), close lid tightly and shake vigorously until blended.  Pour over salad greens or lightly steamed vegetables.
My favorite is to use this dressing over organic mixed greens, and heirloom tomatoes topped with shaved parmesan cheese.

Storage: Since it's already in a jar, just place unused portion in the fridge.  Stores up to a week.


When you crave something sweet in the afternoon, don't succumb to a sugar laden , highly processed candy bar.  Try these incredibly satisfying and delicious date balls packed with nutritious nuts & seeds.

Date Power Balls

Ingredients:

15 - 16 medjool dates (pitted)
1/3 cup pumpkin seeds
1/3 cup pecans or walnuts
1/4 flax seeds, ground
1/2 teaspoon cinnamon powder
pinch of sea salt
1 Tbsp. water
1/2 cup shredded coconut for coating (optional)


Place all ingredients in a food processor and pulse a few times until dates are chopped up. You may need to add in just a tiny more amount of water to facilitate the processing.  Spoon out one round tablespoon of the date mixture and roll between the palms of your hands into balls.  Dust with shredded coconut if desired.

Storage: Place in an airtight container and store at room temperature or refrigerate.

Nutritional notes:

Dates ~
This fruit is packed with nutrients and is particularly high in potassium.  It is a great source of fiber.

Pumpkin Seeds ~
Contains the precious mineral zinc, which is critical for many enzymatic processes.  It also contains other healthy minerals such as magnesium, manganese, and phosphorous.
